By curbing produce’s sensitivity to ethylene—a plant hormone that promotes ripening—and providing bacterial and fungal protection, 1-MCP could keep products on shelves anywhere from three days to two weeks, depending on the product. Mouat’s interest in farming and scientific expertise enabled him to close the chemistry-sustainability gap, essentially paving the way for Hazel Technologies.
